An easy, go-to salad to serve at your next BBQ. Make it day of or up to two days in advance, the flavor will intensify with age! Pairs perfectly with grilled chicken.
- 2 can black eyed peas, drained and rinsed
- 2 Roma tomatoes, diced
- ½ red onion, diced
- 1 red, yellow, or orange bell pepper, diced
- 1 jalapeno, diced (remove seeds if you don’t like spice!)
- 4 green onions, sliced
- 1/3 cup cilantro, chopped
- ¼ cup rice wine vinegar
- 2 tablespoons olive oil
- ½ teaspoon sugar
- Salt & pepper to taste
In a large bowl, combine black eyed peas, tomato, onions, peppers, and cilantro.
In a small bowl, dissolve sugar in vinegar, whisk in olive oil, season with salt and pepper. Pour over mixture.
